Sipo Eggs Recipe/ Filipino dish

This dish has a rich thick sauce with mixed vegetables.  It could be your appetizer or as part of the main dish.   It is also good with bread and  rice (for the rice person).  The one I just cooked for my filipino colleagues to try was very simple.  Sipo egg originated in Pampanga, Philippines, not many filipinos had tried it.  The dish could be more sumptuous with prawns.  I cooked this in the morning before I went for work, I did not have time to peel and  devein prawns.  It was still yummy though and filling.

Ingredients:

15 pieces boiled quail eggs
1/2 kilo prawns (head and shell removed, deveined)
1 big onion
1 tbsp minced garlic
1/4 cup butter
450g   mixed vegetables:  carrots, green peas, corn, green beans (blanched)
3/4 cup water (shrimp stock if available)
8 thin slices of ham (optional), cut into thin cube
1 can cream of mushroom
small can of nestle cream (can also use whipping cream or table cream)
1 tbsp cooking oil
Salt and pepper to taste

Cooking Directions:

1.  Melt the butter in a cooking pan then add the oil.
2.  Saute the onion and garlic.  Add the salt and pepper.
3.  Add the blanched mixed vegetables and cook for 3 minutes
4.  Add the water or stock and boil for a minute or 2
5.  Add the quail eggs  (and the sauteed shrimps if there is) then stir
6.  Pour-in the cream of mushroom and nestle cream
7.  Continue stirring until all the ingredients are thoroughly mixed

    1. you are right Alfonso. 1 quail egg is equivalent to 3 chicken eggs. Egg yolk has more cholesterol compare to the meat itself. Eat moderately.
